Reduced Cabernet Sauvignon with Lemon
Ingredients:
-Half a teaspoon of freshly squeezed lemon juice
- 4 tablespoons of extra virgin olive oil
-2/3c. of your favorite Cabernet Sauvignon
-2/3 c. beef stock
-2/3 a cup of chicken stock
-2 finely sliced shallots
-2 tbsp. butter

Finely chop the shallots and put it in a saucepan together with the wine. Reduce the mixture to 2/3 with a light boil, a strong boil will ruin the wine. Add the beef and chicken consomm than allow to further reduce to half the original amount. When the mixture has reduced to half, add the butter. Stir until the butter smoothens out the mixture. Once fully incorporated, take off from heat and strain to a bowl and add the lemon juice for an extra kick.

-one fourth teaspoon of salt
-three-fourths cup of sour cream
-a dash of paprika
-1 big cucumber, pitted and grated.
